I've been looking to book taxi from the airport to Perama, they say its about 7 km, but the taxi's are quoting anywhere between e56/e65 for return,is this about right?

No- fare should be about 8-10 Euros- no need to book there are always loads of taxis at the airport

We picked up a taxi outside the airport a couple of weeks ago and it was 35 euros (one way) to Agios Gordios which is about 15km.

Ask your accommodation owner to get a quote and arrange the taxi for you.
A good owner will usually get the best price he can for his guests.
A few weeks ago my friend who has apartments had incoming guests telephone him for directions. They were just picking up a taxi at the port. He gave them directions for part of the journey but told them to ask the taxi driver to ring him when he reached a certain point. When he rang he gave the driver directions for the rest of the journey but also negotiated a fairer price.

The money you would spend ringing the owner from UK will definitely be more than you will save if you just go to the first taxi in the rank at the airport as it is a short ride, and providing you are not overloaded with luggage should be a maximum of 10 Euros!
