Tell her to just stick to Metaxa for your hols.
Thats what I try to do
Is it wheat in general or an intolerance to gluten?
I didn't see any gluten free products in the shops I used over there,

If you click on search (the magnifying glass in the top right hand corner) and type in "Moving to Corfu" you should find a post by Brenda (member name Bbgems) who is in the process of starting a hotel business aimed specifically at people who are wheat intolerant. It may well be up and running when you go so send her a pm.

A and B supermarkets sell some non wheat flours like rye and barley flour. They also have some rice and corn crackers that are nice as a snack. I am allergic to wheat, not just intolerant, so know how difficult it can be. I am thinking of buying a bread maker next time they are on offer in Lidls so I can make my own wheat free bread. I make biscuits and flapjacks with dried fruit and oats. Meringues are good too!
