Hi Purrypuss,

Do not worry where it is, its Greek Food, use in Greek Life. There you go then.

This is my recipe, a tin of chick peas (Garbanzo Beans), sometimes I get the dried ones and soak them, but for a quick dish use tin. Juice of 1 lge lemon, 6tbsp of tahini (Sesame Seed Paste), 2tbsp Olive Oil, 2 cloves garlic crushed, salt and pepper, chopped coriander and black olives for garnish.

Drain Chickpeas, reserve a little liquid. Put the chickpeas and liquid into a food processor, and mix. Slowly adding the more reserved liquid and lemon juice. Blend well. Stir in the Tahini paste and all but 1 teaspoon of the olive oil. Add the garlic, season to taste, blend until smooth. Spoon in to a serving dish, smooth the top and drizzle the remaining olive oil over the top. Garnish. Set aside to chill in the fridge. Serve with toasted bread.

I have another one some where, I will find it out for you.

Hi purrypuss,

I am sure that Chris' recipe is fantastic but you could try the Taverna Agni recipe from this site

http://www.agni.gr/food_and_wine/recipes/humus.asp

Enjoy, whatever recipe you use!

1 large augergine roasted and inside scooped out

Houmous is not a Greek dish!!!

Its Cypriot - Arabian i think. It is considered a greek dish because most "Greek" restaurants in England are actually run by Cypriots and so it is always on the menu.

Years ago an irish friend of ours visited Corfu and was surprised to see that none of the restaurants here served it. He couldn't believe it. He also went swimming in Glyfada on a sunny February morning and couldn't believe it when we didn't join him...

I love the stuff. The supermarket here does a very nice version, however i have never eaten home made one so can't compare... i get through two tubs a week (on my own - I can't persuade the others to eat it...)
