I have not stayed in any properties on Paxos, so cannot comment there, but have visited both villages by yacht.
Gaios is the capital as can be busy and has plenty of bars, restaurants and so on. The town doesn't have a "sea view" as such as there is a small island in the way - the water between the two forms the harbour - it looks like a large river. Consequently, there are no beaches close to the town centre, but there are once you get outside the harbour area.
Loggos is tiny fishing village, just to the north of Gaios and has a couple of tavernas and is very pretty (despite the old soap factory on the northern side of the bay - just as well it's there as it helps us yachties find the place from the sea!). The pace is much quieter than Gaios. The water inside the small harbour is relatively shallow, which means that it is not a mecca for visiting yachts - so most tie up outside the harbour wall, but there isn't much space. This, again helps to restrict the numbers, particularly overnight as there is little shelter for the yachts in the event of a blow.
Other places to consider are Lakka (on the north coast) which is a larger village, but smaller than Gaios with a good number of bars, restaurants and shops - it's just that bit quiter than Gaios, but it is another good anchorage for yachts, so it gets busy in the hight of summer. Fortunately for non-yachting types, the town quay is quite small, so by and large, visting yachts are forced to anchor in the bay.
In both Gaios and Lakka, the closer to the waterfront you are, the more expensive the prices in the bars and tavernas (and Paxos tends to be a bit more expensive than Corfu anyway) - but there's plenty of choice, so look around.
Another quiet spot is Mogonissi, which is a totally enclosed bay on the south of the island - there is one, fairly narrow, entrance channel for yachts - and as it is so sheltered it provides an excellent bolt hole in bad weather. However, it's not as scenic as the other places mentioned and has the disadvantage of having only one taverna - that said, we have had some excellent evenings there with Greek dancing etc.
