Just read a thread about yummy recipes.Would anyone be interested in putting together a recipe book of the tavernas recipes? It could be sold to maybe raise funds for the donkey sanctuary or something? (Visited the sanctuary a week ago and they are desperate for funds as they have to find alternative land). I know my husband loves cooking corfiot dishes if he can get his hands on them. He's having a go at auberginemasalata (or whatever the Corfiot name is) which we sampled for the 1st time last week! What does everyone think? Ele

I write articles and columns about Greek traditional cookery. I have some great local recipes, and would be willing to write a chapter for the book if you are interested. I think the donkey sanctuary is a good cause!

HERE IS A START TO THE BOOK                                                                                                        Greek recipe.  Melomakarona (honey cookies)

Main

150 ml olive oil

80 g sugar

4 tablespoons brandy

juice of 1 orange

½ teaspoon cinnamon

400 g self-raising flour

pinch of salt

½ teaspoon bicarbonate of soda

 

Syrup

1 teacup honey

120 g sugar

150 ml water

Topping

2 teaspoons cinnamon

170 g shelled walnuts, coarsely chopped

Beat the oil and sugar well, add the brandy, orange juice and cinnamon and blend. Sift the flour with a pinch of salt and the soda and add it gradually into the oil and sugar mixture, mixing it with a spoon. Knead the dough well for about 10 minutes. If too sticky, add 1-2 tablespoons more flour and mix it well. Knead until it feels soft and pliable. Flour your hands and take egg-sized portions of dough. Roll and shape them into small oval shapes. Place on an unbuttered baking sheet, and flatten them with the palm of your hand. Bake in a pre-heated oven, gas no. 4/ 350 grades F/ 180 grades C), for 25 minutes. Let them cool and harden for 24 hours before dipping them in the honey syrup.


Prepare the syrup by mixing in a saucepan the honey, sugar and water. Bring slowly to the boil, skim with a spoon, then simmer for 4-5 minutes. Dip the cold melomakarona in the hot syrup, three or four at a time only. Let them stand for 1 minute and take them out with a slotted spoon. Place on a decorative platter and immediately sprinkle with a little cinnamon and chopped walnuts. If they are not consumed during the next 3-4 days they should be kept in airtight tins, like biscuits.

Here's a fairly healthy and filling dish....

 BRIAMI
   
(Baked Courgettes and Potatoes)

Ingredients

1 lb. courgettes
1 lb potatoes, peeled and thinly sliced
1/2 lb. tomatoes, sliced  (you can use tinned tomatoes - but fresh are best)
1 green or red pepper, sliced
2 or 3 or 4 cloves garlic (depending on how much you like garlic!!), peeled and sliced
1 medium onion, finely chopped
1 tablespoon olive oil (use virgin if poss)
1/4 pint water
1 tablespoon fresh oregano (1 teaspoon of dried)
Sea salt and freshly gound black pepper

Scrub clean the courgettes and slice thinly.
Prepare other vegetables as necessary and slice into thick pieces.
Mix ingredients together in a large oven-proof dish, sprinkle on the
oregano and seasononing, including the crushed or finely chopped garlic cloves.


Cook in a pre-heated oven at about 200degC, or 180degC if fan assisted,  for about 1.5 hours.


Stir the mixture every 20 minutes or so.

Before the last 10 minutes or so, turn the oven up to around 220/230degC to crisp up the potatoes.

Serve with some grated white cheese sprinkled on top

I think that is a lovely idea but it maybe very expensive to set in action and someone would have to meet the initial costs and risk not selling all the books.

A downloadable version would be much cheaper and easier.  I will have a word with Angela (our computer expert - I am rubbish so my opinion doesn't really count!) and see what she thinks.
