Which are the unmissable beaches in Corfu that you can recommend for me to visit? Ideally not too crowded, with sand and good sea to swim and snorkel in!

Best beaches to snorkle off would be pebble and not sand as this sometimes makes the water murkey. Try paleo, Liapades which is just down the coast or Kassiopi is nice for a day out, very clear water.
As Nigel says the best snorkeling can be done off the pebbly beaches like Avlaki. But for sand and a warm shallow sea, Kalamaki is the one for me.

just travel south towards lefkimi once you see the signs for aghious mathios just travel down the west coast.. there is only one road south so if you go left or right you cant get lost...when you get to vitalades stop ...youve reached a closely gaurded secret so do tell anyone

Kassiopi has a stunning beach, blink and you miss the turning though! Very shallow for approx. 100yds but then gets deeper. We had a wonderful day out there with ouzoman and cooljane!
We also love the beach at Aghios Gordios - head over towards the Aghios Gordios Hotel it's a little quieter down the far end.
